Every year I go on a trip and try to take away a new recipe. Most recently I was in Bali, Indonesia, and I thought, “what better way to get some inspiration for healthy eating then to attend a Balinese cooking class”!
I will share a warm, colourful recipe that is fitting for those cold winter days we have in Toronto.
Light, fresh, and green meals are what I crave for and these Balinese flavours satisfy all three at the same time! This easy-to-make recipe can be made as a main or a side dish. It is a Bali special- hot and sour vegetable soup!
The soup features chili pepper, lemon, and hearty vegetables tossed in a light vegetable broth.
It is is filled with Balinese flavour and bright colours. The ingredients and instructions are provided below, why not give it a try!?
- 2 cups mushrooms
- 1 small carrot
- String beans
- 5 cloves of garlic
- 5 shallots
- 1 lemon
- 1 spring onion
- 1 hot chili (to taste)
- 1 litre vegetable stock
- Salt and black pepper
- Slice mushrooms, green beans, garlic, spring onion and shallots. Cube the carrots into centimeter pieces. Slice the chili and remove its seeds. Cut the lemon into slices.
- Sauté garlic, shallots, and spring onion until light brown. Add mushrooms and chili and continue to sauté.
- Pour in the vegetable stock and squeeze the lemon slices over the stock.
- Bring the stock to a boil then add the carrots, green beans with a dash of salt and black pepper to taste.
- Ready to Serve!
